At Billy's, we cook with fire and smoke, the oldest, truest form of craft. It's instinct and technique working together, shaped by the dialogue between flame, ingredient, and cook. Fire is unforgiving, wood choice, heat, and smoke demand patience and precision. But when you respect the process, the ingredients speak clearly.
We care deeply about where our food comes from and treat every cut, every vegetable, every flame with intention. American barbecue is sacred to me, one of the great culinary traditions, but it's only part of my story. I grew up around Latin flavors, bold seasonings, and soulful South American cooking, and those influences guide how I build this menu.
People argue about authenticity; I care about results. My only goal is to make the best barbecue I can and share it with the people who sit at our table. Smoke and fire simply make food taste better.
